The term "single pot still" refers to whiskey that is created from a mash containing both malted and unmalted barley and then triple distilled in copper pot stills in a single distillery. It is a style unique to Ireland and Redbreast 12 Year is a fine example, with a nose that's sweet and rich and has subtle fruit and floral notes. Its taste is warm and rich with a complex mix of fruit, honey, vanilla, spice, and citrus and with nutty undertones. A long slow finish ends with vanilla, spice, fruit, and a hint of wood. Excellent for both sipping and mixing.
