When the Champagne Director of Pops for Champagne approached Colleen Healy to bartend at and help run their establishment, she was intrigued. After working there for just one day, she could not wait to go back! Learning about Champagne became an obsession—the chemistry, the varietals, the culture, and the bubbles had her absolutely hooked. She's been at Pops for Champagne for eight years now and has taken over the beverage program. She uses her knowledge of fresh, seasonal ingredients from her culinary background to create unique, well-balanced specialty Champagne cocktails. Colleen has been deemed the “Sparkling Queen of Chicago”—her Champagne cocktails have been called some of the best in the city.

Zach Patterson is an award-winning bartender with over 10 years' experience in every type of establishment—from neighborhood dive bars to nightclubs—across the globe. His signature drinks appear on menus worldwide, and he has been featured in various notable beverage magazines and on several cocktail shows, including Local Flight on the Tastemade network. He co-owns and operates Melrose Umbrella Co. on Los Angeles’s famed Melrose Ave—a neighborhood watering hole bringin the social cocktail experience back to basics with house-made tinctures, syrups, and infusions. It was named LA Weekly ’s “Best Modern Cocktail Bar” in 2014 and featured by Imbibe Magazine in their Top 50 Beautiful Bar Designs list in 2016.

Behind the Thyme After Time

Pamela Wiznitzer has a true passion and zest for the industry, which can be tasted in every drink she serves. She is  the Creative Director and bartender at Seamstress in Manhattan and has earned many honors from her peers, such as winning first place in the 2014 National Restaurant Association's "Star of the Bar" and 2013 Louis Royer "Show Me the Proof" competitions. Additionally, she was named one of Food & Wine 's Top 10 Rising Star Mixologists, Wine Enthusiast 's "40 under 40" 2015 honorees, and was one of four inductees into the "Dame Hall of Fame" in 2015. Pamela has been featured in The New York Times, Wall Street Journal, The Tasting Panel, Travel & Leisure, Bar Business Magazine, The Village Voice, Zagat, Glamour, Cosmopolitan, Shape, Self, ABCNews.com, and Underground Eats, and has had recurring appearances on the Food Network, VH1, NBC, LXTV, Fox & Friends, and BetterTV.
