Kevin Diedrich is an award-winning San Francisco–based bartender and an owner of Pacific Cocktail Haven and the forthcoming Night Market bar. Kevin's career has spanned cities from coast to coast, from his hometown of Washington, DC, to NYC and San Francisco, and he has worked at bars such as Bourbon & Branch, Kimpton Hotels, the Ritz-Carlton in DC and San Francisco, multiple Bourbon Steak locations, Clover Club, and the Michael Mina restaurant group. Kevin and his bars have had such notable recognitions as Esquire’s Best Bars in America, 2019; Time Out's 2018 Cocktail Bar of the Year; Golden Gate Restaurant Association’s Saucy Award Cocktail Bar of the Year, 2019; Thrillist's Bartender of the Year, 2016; Tales of the Cocktail’s Best American Bartender nomination (top 4) 2017, 2018, 2019, 2020; Tales of the Cocktail’s Best American Cocktail Bar (top 10) 2018, 2020; Tales of the Cocktail’s Best Bar Team (top 10) 2018, 2020; and Bartender/Owner of the Year, 2020, by Nightclub & Bar Show.

Behind Miles from the Mainland

Greg Mayer is a veteran of both bar and kitchen. Growing up on the Jersey Shore, Greg began his career in the hospitality industry working in kitchens as a line cook and eventually earned a culinary arts degree at Johnson & Wales University. It was there that Greg decided to make the switch to the front of the house and hasn’t looked back since. Beginning his career behind the stick in Providence, Greg then moved to Nashville and then to Austin, where he worked at some of the best bars in the area and racked up a list of competition wins. Greg now calls NYC home, and he works as the national brand ambassador for LHK Spirits, spreading his love of whisk(e)y around the country. Greg is also the in-house cocktail counsel for Shaker & Spoon, helping to ensure that each box is of the highest quality, something we know our subscribers have come to expect.

Caer Maiko is the bar manager for Last Straw in Austin, TX, and co-creator of Daijoubu Pop Up: Super Asian Cocktails, a traveling cocktail experience that pushes culinary boundaries in cocktails by incorporating surprising, unique, and more authentic Asian flavors while creating a space for Asian people in front of and behind the bar. In 2015, she moved to Austin, where she has worked and managed at Peche, the Roosevelt Room, and the Eleanor's Miracle on 5th Street Christmas Pop Up. She is a two-time national champion for Espolon Cocktail Fights, the winner of the Borion Cup in 2019, and a national finalist for Speed Rack and Chivas Masters, and more. She and her cocktails have been featured on, Eater, Punch, Tribeza, Chilled magazine, Beverage Media Group, The Local Palate, The Bourbon Review, and Martha Stewart Weddings. When Caer isn't running bars or producing pop-ups, she is usually drawing or playing with her cats, Mango and Yojimbo.
