Joel Carleton has over a decade of food and beverage industry experience and has competed in craft cocktail competitions across Canada. He owns Bee's Knees Bar Services, a hospitality consulting firm and private bar service in Central Canada. Joel's love of whisky has brought him to travel, tour, and study across North America.

Evelyn Chick began her bartending career in Vancouver, quickly getting recognition in the Canadian scene for her unique approach to flavours. She's found success in multiple national & international cocktail competitions, including a win at the Global Beefeater MIXLDN championships in 2015 while representing Canada against 31 other countries. Evelyn runs a fun bar program at PrettyUgly Bar in Toronto, is the Bar & Beverage curator for the Restaurants Canada Show and the coordinator of Speed Rack Canada (an all-female speed-bartending competition), and is an advocate for building solid, integrated bar communities in small markets. She's traveled around the world promoting Canadian cocktail culture and is thrilled to be involved with its rapid growth. 

Behind the Leather & Lace


Christopher Sinclair has been a bartender for over 17 years and is a strong supporter of those who propel the craft forward. He opened 5 Bistro Bar (in The Hotel Shattuck) and Revival in Berkeley, and The Jungle Bird in Sacramento, in addition to being the bar consultant and opening general manager of La Cosecha and head bartender at The Red Rabbit. Christopher was the founding president of the Sacramento chapter of the USBG and lead instructor at the San Francisco School of Bartending. He can currently be found bartending at Sacramento's Kasbah Lounge.
