Any of them will work well for all three recipes found in this box,
depending on your preference:
Nathan Dalton recommends Porton Acholado, which is newer and less well known than Porton's flagship "mosto verde" brand in the rectangular bottle. While they're both complex and have enough power to shine through in a cocktail, the regular Acholado is a lot stronger in the floral department (notably lavender) and really sings with the drinks in this box.
Shaun Loughran says that in creating a pisco cocktail, he knows that there is no choice other than Macchu Pisco. This unique spirit is not only hand-crafted with a strong connection to tradition, but it's a well-received, friendly spirit that's an excellent choice for any cocktail connoisseur.
For Tara Heffermon, pisco is a highly underrated spirit, and Encanto is her absolute desert island pisco, both for sipping and for cocktails. The varietal characteristics that come through with this particular blend make it perfect for cocktails, or for drinking straight (as she tries to do every day, for her health).
Recommended amount: To make all 12 drinks, you'll need 24 oz of pisco; a medium (750 ml) bottle will be your best bet.
Recommended barware: A few different jiggers that measure 1/4, 1/2, 2/3 (if you can find it) and 2 oz, as well as a strainer, shaker, bar spoon, mixing glass, fine strainer, and citrus reamer or juicer. These are not all strictly necessary, but will improve your mixology experience.
Recommended glassware: Rocks glass, a collins or highball glass, and a coupe
Recommended ice: To make all 12 cocktails in one go, you'll need about 5 pounds of ice (5 ice trays’ worth).
