Rather than using a rocks glass in step 1, instead fill a double rocks glass with cubed ice. Add 1 oz ginger-grapefruit cordial, 2 dashes (not drops) Thai bitters, and 2 oz Meyer lemon club soda to the glass and softly stir to combine. Top with a grapefruit crisp. And voila—you’ve achieved a nonalcoholic zero proof version of Play It Cool!
